  • 1 can refried beans
  • 1 cup shredded cooked rotisserie chicken
  • ½ tsp. chili powder
  • ½ tsp. paprika
  • ½ tsp. cumin
  • ½ tsp. salt
  • ½ tsp. pepper
  • 1 bag restaurant-style tortilla chips
  • 1 cup shredded Cheddar and Monterey Jack cheese blend
  • ¼ cup sliced green onions
  • 1 can sliced ripe olives, drained
  • Sour cream for topping
  • Guacamole
  • 3 avocados, peeled, seeded and diced
  • 1 lime
  • ½ tsp. salt
  • ½ onion, diced
  • 1 can Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, liquid reserved
  • 1 tbsp. cilantro, chopped
  1. Preheat oven to 400°F.
  2. Combine refried beans and shredded chicken in medium bowl. Add chili powder, paprika, cumin, salt and pepper; mix well and set aside.
  3. Arrange chips in large baking dish. Top with seasoned beans-chicken mixture; sprinkle cheese on top.
  4. Bake for 5 minutes.
  5. In the meantime, mash diced avocados in a medium bowl. Blend in salt, diced onion, diced tomatoes and chopped cilantro. Cut lime in half and squeeze juice into guacamole. Mix ingredients well.
  6. After baking the nachos bowl, top with green onions and olives. Garnish with sour cream and guacamole. Serve immediately.
