These Clean Eating Twice Baked Potatoes are simple to make, use only healthy real food ingredients, and are the perfect side dish for just about any meal! This year, my family will be enjoying these along with the ham at our Christmas dinner. The sweet maple flavor and crunchy pecans always make them a family favorite!

Okay, enough talking about how delicious they are and onto the recipe! I hope you and your family enjoy this delicious side dish as much as mine has!

Clean Eating Twice Baked Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes
  • 3/4 cup pure maple syrup
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon Mexican vanilla extract
  • 1 teaspoon salt
  • 1 cup pecans, chopped

Directions

  1. Wash the sweet potatoes and bake them in a 375 degree oven until tender, about 30-35 minutes. When they are finished cooking (and had a minute to cool) slice them open and scoop out the flesh into a large bowl, being careful not to rip the peel.
  2. Add maple syrup, milk, eggs, vanilla, and salt to potato flesh. With a potato masher, mash them up just until combined – you don’t want them to be too smooth.
  3. Scoop the sweet potato mixture back into the empty shell/peel. Place them onto a foil lined cookie sheet.
  4. Bake uncovered in a 400 degree oven for 30 minutes.
  5. Top each with 1/8 cup chopped pecans. Enjoy!
