So, about that recipe… To preface, I’ll go back in time to when I was young. I wasn’t ever much of a cake fan. (At least not the cake in a box kind.) Looking back, I’d like to think I had more sophisticated taste.  The reality of it was that my parents ran a bed and breakfast. That meant I was exposed to a lot of different types of foods. We would have Glazed Cornish Game Hen one night, and Ramen Noodles the next, depending on if there was an event going on that day.  My mom was ALWAYS cooking, which meant WE were always guinea pigs.  It was a pretty good gig!

I remember being introduced to  Apple Puff Pastry when I was about 9 years old. It blew my mind! At that moment, I also knew that I had finally found a replacement for the so-so traditional birthday dessert. I still remember the look my friends gave me when I told them I wanted puff pastry for my birthday.  And I still, to this day, get those same looks when I say I don’t want cake on my special day. That is, until they experience recipes like this for themselves.  Only then, do I get the look of complete and utter understanding.  This recipe is a short, sweet, simplified version of the original. It is quick to make, and a total crowd pleaser.  Try it!  You’ll like it. And you might even have a new request for your birthday dessert.

 

Apple Puff Pastry

(makes 2)

1 pkg. (2 sheets) puff pastry sheets

1 – 8oz.  cream cheese, softened

1 egg

1/4 c. sugar

1 t. Mexican vanilla

1 T.  flour

2 cans apple pie filling (can use cherry pie filling if desired)

Icing

1 c. powdered sugar

5 – 6 Tbs. heavy cream

1 tsp. vanilla

Thaw puff pastry sheets. When room temperature, roll out puff pastry sheet to about 1/8” thick.

Cream together cream cheese, egg, sugar, vanilla and flour.

Divide cream cheese mixture in half.  Put each half in the center of each puff pastry sheet.

Put apple pie filling in a ring around the cream cheese.

Fold corners up over the pie filling.

Dip a pastry brush in water and brush the small edges and fold them up to seal.  This keeps the filling from oozing out while baking.

Bake 20-25 minutes at 400o.
