This strawberry spinach salad is delicious and simple to make.
My late grandpa usually ate dinners at our home every Sunday. He loved fresh salads. I made him this spinach strawberry salad with strawberry poppy seed dressing that I had served years ago at a restaurant where I worked and he loved it.
To make it I was going off of a memory from about 20 years ago… so while this may not be the exact salad we had on the menu, I remember that it had strawberries, almonds, red onion, spinach, and a poppy seed dressing and that the combination was delicious—it must have been if I could remember this salad 20 years later.
My husband even raved about this spinach strawberry salad. I plan on making it for him regularly.
This combination of food is hard to beat in simplicity and flavor.
Combining fresh spinach, sweet strawberries, crunchy almonds, and tangy onions topped with a sweet poppy seed strawberry vinaigrette dressing is delicious.
Ingredients
2 large handfuls of Spinach (I used baby spinach), washed and spun dry
10 large ripe Strawberries, sliced
1/4 Red onion, thinly sliced and diced
1/4 Cup almonds, sliced (you can buy them pre sliced)
Strawberry Poppy Seed dressing* (recipe here)
*If you do not want to make homemade dressing. You can buy a store-bought strawberry or raspberry vinaigrette. If the store-bought version doesn’t have poppy seeds, just add 1 Tablespoon of them. If the store-bought version is lacking in flavor, blend in fresh strawberries and/or honey.
