Today I needed a quick yet filling lunch. I was in the mood for Mexican so I tried something new. I took a standard cheese tortilla and added to it. The results were what I term a ‘5 star Mexican dish in 3 minutes! Garantizado (Guaranteed).

1. Put cheese on tortilla, sprinkle with one or two shakes of garlic powder, and one shake of table salt. Tear apart about 5-7 olives and put on top of the cheese. Microwave for 45 seconds.

2. As the tortilla is microwaving slice 1/4 tomato (or 1/2 Roma tomato) and cut up a quarter of an avocado. Once the cheese is melted, take the dish out of the microwave and top with the tomatoes and avocados.

Tortilla
Cheese (I used Mozzarella)
Tomato
Avocado
Olives
Garlic powder
Salt

Cook Time: 1 minute
Total Time: 3 minutes

Did you not find a need for salsa? Do you think this could be a good addition or do you recommend sticking strictly to the recipe? It looks really good as is, I just like a little more "kick" to my Mexican foods.
