For a sweet breakfast or as dessert these Dulce de Leche Pancakes are divine. This sauce would also taste great on waffles.
Better yet, they only take 10-15 minutes from start to finish.
You will need the following ingredients:
Pancake mix and cold water,
1 Cup buttermilk,
1 teaspoon vanilla extract,
1/2 Cup butter,
2 Tablespoons corn syrup,
1 1/2 Cup white sugar, and
1 teaspoon baking soda.
Optional for garnish: Whipping cream, toffee bits, and chopped nuts.
1. Combine baking soda, sugar, buttermilk, corn syrup, and butter in a large pot or a high walled sauce pan, stir, bring to a boil and cook for 6 minutes. Stir every minute or so.
2. Make the pancake mixture and cook the pancakes while the syrup is boiling.
3. Once the syrup done (6-8 minutes) take off heat and cool for about 2 minutes (so its not bubbling), then add vanilla extract stir well. This is important so that you do not burn the vanilla.
4. Spread the Dulce de Leche on the pancake. Top with whipping cream, toffee bits and chopped nuts.
Guten Appetit!

They were fabulous- the only catch is getting the syrup chilled faster than the pancakes (I was only cooking for 2). I saved the remaining syrup for easy fast use. I didn't have to worry about it spoiling either cuz the whole family wanted pancakes all weekend. Thank you 💞 Heather
