My mom has been making this delicious and amazing carrot cake for longer than I’ve been alive… That means it has been a family favorite for over 30 years. It comes out deliciously moist, very flavorful, and is easy to make. Thus, it is a fail-proof recipe. Further, it is topped with the smoothest and best cream cheese frosting you can find.

Ingredients

3⁄4 cup olive oil
2 cups unbleached flour
2 tsp. cinnamon
4 eggs
1 cup brown sugar
3 cups grated carrots
1⁄2 cup white sugar
1 (14 oz.) can crushed pineapple with juice
1 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
Optional
1/2 Cup chopped walnuts
1/2 Cup raisins
1/2 Cup shredded coconut

Directions

Sift cinnamon, flour, sugars, salt, soda and baking powder in a large bowl.
Add oil, eggs, carrots and pineapple. Mix 3 minutes.
Bake in cake pan at 350 degrees for 32 minutes or until the middle springs up with the light press down of a finger.

To make the cake as pictured, cook in a round spring form cake pan. Once the cake is cooled, cut into 3 sections/layers. Frost in between each section and also frost the tops and sides of cake. For added interest, place orange baking sprinkles on the sides.

So I made the cake according to directions and I put it in two round cake pans. It is taking a lot longer than 25 minutes. Thoughts?

I made it again, it was fantastic. But you were right, it took longer. Mine took 32 minutes. I changed the recipe to indicate that. I asked my mom and she said she presses her finger lightly in the middle and when it springs up its done. She starts checking at 25 minutes. So her recipe didn't have that written down. I've added it to it.

Thisis so amazing. It's in the oven now.

I am using a bundt cake pan and it is not done yet. I set the timer for another 20 minutes.

Thanks for letting me know. Yes for round cake pans, sheet and bundt the time will vary. I made it again recently and it was amazingly good and moist but in the a sheet/cake pan it took 32 minutes. How long did it take in the bundt pan?
