Rote Grütze Trifle Recipe.
I combined two of my favorite desserts: German Rote Grütze and a British Trifle (non-alcoholic) to make this delicious Rote Grütze Trifle.
One of the staple desserts in northern Germany is Rote Grütze.
It is a pudding traditionally made with red-fruit (strawberries, raspberries, red currants, and/or cherries). It is often served with a sweet vanilla whipped cream topping or ice cream.
I had extra homemade angel food cake and wanted to make a trifle with it.
I was debating what kind of trifle I should make with my angel food cake.
I was thinking of making my mom’s strawberry and bananas trifle (I’ll likely share it with you one day), but, the thought struck me that Rote Grütze would taste amazing turned into a trifle and it is!
This combination of red berry pudding, angel food cake and vanilla whipped cream turned out to be absolutely delicious.
I gave the whole trifle to my parents and asked them to share it with friends or family.
To my surprise, they were able to share it with multiple friends and neighbors. My mom said that everybody who had it LOVED it. She said it was absolutely delicious!
I did make my family a little bowl to eat ourselves and I agreed with my mom…it turned out fantastic.

Ingredients for Rote Grütze Trifle Recipe
Rote Grütze Pudding
- 1 pound strawberries
- 9 oz raspberries
- 14.5 oz can tart cherries or 9 oz red currants
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 cinnamon stick
- 3 Cups apple juice
- 3.5 oz instant vanilla puddingDirections on how to make this recipe here.
Sweet Vanilla Whipping Cream
- 1 1/3 Cup sugar
- 4 Cups heavy whipping cream
- 1 Tablespoon Vanilla (use clear vanilla if you want the cream to remain very white)
Combine all of the ingredients and whip them in a mixer until soft peaks form. Keep refrigerated until use.
Homemade Angel Food Cake—Alternatively you can use a store bought angel food cake.
- 1 ¼ cups cake flour
- 1 ¾ cups white sugar (blended or pulsed to a finer granulation but do not use powdered/icing sugar)
- ¼ teaspoon salt (blended or pulsed to a finer granulation)
- 1 ½ cups egg whites (depending on size of egg this amounts to about 10-15 eggs)
- 1 ½ teaspoons cream of tartar
- 1 ½ teaspoons vanilla extract

Garnish
Set aside a few strawberries, raspberries and mint leaves to garnish the top of the trifle with.

- Make the Rote Grütze and Angel Food Cake. Allow them to cool completely (at least 2 hours).
- Make the sweet vanilla whipping cream.
- Cut up the angel food cake into small pieces.
- Layer the bottom of a trifle dish or large glass bowl with 2 layers of cake. Tip- Turn the cake so that the white part faces out so the trifle looks more uniform in color and appetizing.
- Pour 1/3 of the Rote Grütze pudding onto the cake pieces. Note- In the video I doubled the recipe to make sure I would have enough. I did not need to double it, so I won’t do that next time.
- Put 1 1/2 C sweet whipped topping on top of the Rote Grütze and spread it out evenly.
- Repeat steps 4-6 layering the 3 ingredients again.
- Repeat steps 4-5 layering 2 of the 3 ingredients again.
- Finally, scoop the remainder of the whipping cream on the top of the final layer.
- Garnish the top of the trifle with fruit and mint in a pretty arrangement.
- Cover with plastic wrap and refrigerate for 2 hours or overnight.
- Consume within 48 hours and keep refrigerated when not eating.
