I love to throw herbal tea parties.

Authentic Victorian Tea Party

Years ago, I tried my hand at making authentic British clotted cream for afternoon teas.

All of the recipes I have found require unpasteurized cream which is not available anywhere within 60 miles of my home; believe me, I have searched for it.

I was able to find unpasteurized whole milk which was a 40 minute drive from my home.

I was then required a sign a health waiver and it cost over $10.00 a gallon!

I bought 2 gallons and then I went through the arduous process of separating the cream from the milk.

I then used the unpasteurized cream I had separated out for a British clotted cream recipe and it did not turn out. What a waste of time, money, and effort!

So now, I just use this Americanized Clotted Cream recipe for tea parties and whenever I make these delicious British scones.

This Americanized Clotted Cream recipe is delicious and tastes almost like the British Clotted Cream that I’ve had in England and Scotland; my family loves it!

My kids often have spontaneous tea parties with our little Ikea table and it is so cute to watch them play tea party together!

Our elves even have tea parties as well.

I guess you can say we are acting on our British heritage (I am 90% British).

Anyway, that’s a lot of intro for one of the shortest and easiest recipes on my blog…without further adieu.

Recipe for Americanized Clotted Cream


2 Cups heavy whipping cream

2/3 Cup sour cream

3 Tablespoons confectioner’s sugar

1/8 teaspoon salt

Directions

Whip the heavy whipping cream and salt until stiff peaks form (an electric mixer is highly recommended for this), then gently hand stir in sour cream and confectioner’s sugar until just combined. Store in refrigerator until served.

Serves about 1 dozen scones.
