…I’m just playing catch up on blogging. This recipe is from an Authentic Victorian Tea Room style shower I threw a few years ago.

The classic cake served at an afternoon tea is called a Victorian Sponge or a Victorian Sandwich.

Queen Victoria enjoyed it cut into small finger-sized portions with her afternoon tea daily.

I could not host an authentic afternoon tea room party/shower without including this staple on the menu!

To make these Easy Mini Victorian Sponge Sandwiches you will need the following…

Make this Best Vanilla Cake (click here for recipe and detailed baking instructions).

I baked two 12″ rounds and I used baking parchment paper on the bottom and sides of the pans so the cakes came out completely intact.

Once cooled, I carefully cut the cakes in half.

I used a Wilton cake cutter.

Next, using a round cookie cutter, cut out lots of little circles of cake and put them on dessert/candy papers.

I couldn’t find the size of circle I wanted so I sterilized a kid medicine cup and used a toothpick to dig the cake out of it…unconventional I know but it was the perfect size and system of getting these circular cakes.

Next, using strawberry preserves (store bought is fine), pipe strawberry preserves onto each sandwich— making sure to stay away from the edges as best as possible.

Note not all turned out perfect but even those with some preserve dribbles turned out looking great.

Next, mix up this best vanilla frosting recipe and pipe it onto the cakes.

Note, because these mini cakes are so small, there isn’t a lot of wiggle room on the consistency of the frosting. It needs to flow well and not be too runny/soft or it will run down the edges or the cake, too hard and it may tear the cake.

If you follow my recipe exactly, it should be the correct consistency.

However, if for some reason it is too stiff it needs to be warmed up in the microwave (without the metal piping tip) for just a few seconds or held in the hand in the piping bag and massaged to warm it.

If it is too runny, it needs to go into the fridge for 10 minutes or so.

Next, sprinkle confectioner’s sugar through a sieve to top the Victorian sponge sandwiches.

That’s it.

Add these to a Victorian stand (tutorial here) and serve.

Enjoy!
