Very Simple and Quick Blueberry Lemon Curd Trifle
This dessert is delicious yet it is so simple and quick. It’s got a great combination of fresh flavors that balance sweet and citrus. It’s also a pretty mix of blues, purples, whites, and yellows.
Normally, I always whip up fresh whipping cream, but when I made this, the dessert needed to be quick (it takes a minute or two per serving), so I just used store bought whipped cream in a can. Of course you can substitute out homemade whipping cream, if desired.
If you use store-bought pre-made whipped cream, you’ll want to serve it right away. This is because the canned whipped cream doesn’t hold its shape very well and will start to fall fast. This is why it should be served right away.
If you used homemade whipped cream, you could make it and refridgerate it for a few hours (maybe even a day) before serving.
Another great things about this Lemon Berry Trifle is that it is made with ingredients that are easy to find or keep on hand. Lemon curd lasts a long time in the fridge. You can keep a frozen angel food or pound cake in the freezer. Berries and canned whipped cream are often a staple in our fridge…so, it’s great for an impromptu dessert or a treat when you have unexpected guests.
This is also a kid-friendly dessert. My daughter is always wanting to help me bake and this would be the perfect dessert to have her assemble. Young children could help make this with you and not only would it keep them busy for a little bit, it would teach them eye hand coordination skills in the kitchen and help them feel more comfortable and confident about making desserts.
It only requires a few supplies as well…

Trifle bowl or
spoon,
knife,
Ingredients
lemon curd You’ll need about 1-2 TBSP per serving.
blueberries, washed and de-stemmed. You’ll need about 4 oz per serving.
blackberries, washed. You’ll need about 4 oz per serving.
pound cake or angel food cake about 1/10th standard angel food cake per serving.
whipped cream, large can (freshly made with vanilla and sugar or pre-made work)
Garnish- left over berries and 2 thin slices of lemon

1- In a small glass bowl or trifle cup, create layers of the following: cut up angel food cake (enough to cover the bottom of the glass), 1/2-1 Tbsp lemon curd, blueberries (~2oz), Blackberries (2oz), and 1/4 C whipping cream.
2- Repeat step 1.
3- Garnish the top with berries and a thin slice of lemon.
4-Serve immediately or keep chill for up to 2 hours.
