This Roasted Zucchini Recipe is seasoned with herbs, olive oil, and parmesan. This is so delicious and easy to make a side dish or snack recipe.
I love fresh veggies that can be seasoned, prepped, and cooked easily for dinner or snacking. Zucchini is one of those veggies. Slicing it up and tossing it in herbs, some olive oil, and then sprinkling parmesan over it makes a delicious and vitamin-rich side or snack! This is one of my favorite zucchini recipes. I make it quite often. My kids will even devour these—and that’s saying a lot.
Instructions
- Pre-heat oven to 325 F. Wash zucchini and slice into 1/8″ or thinner slices.
- In a medium-sized bowl mix olive oil (or melted butter) and herbs well. Toss zucchini slices in the mixture.
- Place the zucchini slices on a heavy duty baking sheet lined with either tin foil or this kind of silicone baking mat. Sprinkle fresh parmesan over generously.
Bake for 20 minutes at 325 F. Optional: Bake for 15 minutes and then turn the broiler on, crack the oven and broil/roast for 10 minutes for a crispier version—check slices often and take the sheet out before they turn brown.
Serve with dipping ranch or eat them alone.
