- Raise the temperature you bake the bread at. Typically you will raise it at least 25 degrees Fahrenheit. For example, my banana bread recipe bakes at 350 F, so for muffins, I bake them at 375 F. Most bread bakes at 350 F so a general rule is to bake muffins at 375 F.
- Shorten baking time. My zucchini bread recipe bakes for 60 minutes; I bake my zucchini bread muffins for 27 minutes or so. My banana bread bakes for 45 minutes; my banana bread muffins bake for 20 minutes.
- Watch for signs of ‘muffin-doneness.’ To know if the muffins are done, begin after about 12 minutes, to watch for light browning on the edges. Once the edges look light-golden-brown, test the tops. Open the door and push down slightly on the top of the muffin, if it springs back up it is done.
A recipe that makes one loaf of bread will typically make 12 muffins. Double the batter just as you would make two loafs and you will end up with enough to make 24 muffins.
